Turkey Meatballs
These meatballs can be used with many different sauces
Serves 4
Prep time: 20 min. Cook time: 20 min
Ingredients
• 1 pound ground turkey
• 1 egg
• 1/3 cup brown rice flour
• ~2.5 ounces heavy cream
• a 3-4 inch sprig sage, diced
• salt to taste
Directions
Knead all ingredients together in a bowl. Form into 2-inch balls. Place in large
pan with some salted butter. Fry over low heat until slightly browned. (Turn
them occasionally so all the sides get browned.) Add about 1/2 cup water to
the pan. Cover, turn heat up slightly, and cook for 20 minutes, or until fully
cooked.

Of course, you can always just eat the meatballs by themselves, but that might
get boring!

Notes:
If you don't want to touch the meat mixture, you can use plastic bags as gloves.
For safety, poultry products should always be fully cooked. A meatball cut in
half should have no pink color in the center.
