Buckwheat Egg Noodles
Serves 2
Prep time: 10 minutes Cook time: <5 minutes
Ingredients
• 1/2 cup buckwheat flour
• 1 egg
• More buckwheat flour as needed to form dough
• Water for cooking noodles
Directions
Place 1/2 cup flour in a bowl. Add egg and mix well. Add more flour as needed
to form dough---mixture should not be sticky. Roll out into a sheet 1/8 inch
or less thick. Use a pizza cutter to cut into strips/squares/diamonds/whatever
shape you want. Place in a pot of boiling water. Boil until noodles float to
the top of the water (about 3-5 minutes).
Enjoy! Excellent with spaghetti sauce.

Notes:
If you roll the noodles out on a sheet of wax paper, it makes it very easy to
put the noodles in the pot---you just pick up the whole sheet of wax paper and
dump the noodles from it into the pot. :)
